At Castle Rock Organic Dairy we are committed to organic farming. Located amongst the green valley’s south of Eau Claire, WI in Foster we practice stewardship of land, body and soul. We believe in sustainable agriculture and old world craftsmanship. Superior dairy products begin with superior milk. We only use milk from our dairy herd that grazes on lush, green organic pastures from early spring to late fall. Castle Rock has a variety of artisanal cheeses to tempt your pallet from smooth and rich to nutty and tangy. We produce raw cheddar, gently pasteurized cheddar, Colby and our own Harvest Moon. Our old world, handcrafted blue cheese has a rich, creamy consistency after aging for over 120 days in our unique aging caves. Colby Tasting our organic Colby brings you back to a time when Colby was invented, the late 19th or early 20th century. We use old world techniques to produce the cheese similar to cheddar but with a more open texture and higher moisture content. Green Colby is soft and mild – a true local favorite. Cheddar At Castle Rock Organic Farms, we offer both vat pasteurized cheddar and raw milk cheddar. Both styles of cheddar are made using the farmhouse technique of cheddaring, which lends itself to its name. Raw milk cheddar has a deeper flavor with a more creamy texture while the pasteurized cheddar is popular for those who enjoy a more mild cheese. Mild Cheddar Mild cheddar is aged less than 12 weeks in our aging caves. Medium Cheddar Medium cheddar is aged longer than 12 weeks and less than 12 months. Sharp Cheddar Our sharp cheddar is aged longer than 12 months in our aging caves. Harvest Moon Harvest Moon is a hybrid of our own cheddar, developed specifically for Castle Rock Organic Dairy. With a nutty, tangy flavor it pairs well with your favorite red wine and is often preferred over the more mild cheddar. Blue Cheese Our blue cheese is hand crafted in small batches using raw organic cow’s milk with added Penicillium cultures. When aged to maturity, the beautiful blue veined cheese melts in our mouth without a strong aftertaste. Smokey Blue Smokey Blue is hickory smoked in our smoking room, enhancing the flavor of our Artisanal Blue Cheese. Cheese Curds A true Wisconsin favorite is our cheese curd! Naturally white, fresh and squeaky, our curds are sure to please! They are squeakylicious!!! |
